- Lead and manage daily kitchen operations, ensuring seamless collaboration among all culinary outlets, banquets, stewarding, and purchasing to provide exceptional service and efficiency.
- Plan, prepare, and present all food safely, cleanly, and cost-effectively.
- Ensure the maintenance and sanitation of kitchens and equipment meets or exceeds health and safety standards.
- Develop, implement, and oversee the department's budget while monitoring food costs to meet financial goals.
- Create and implement menus focused on quality and profitability while adhering to corporate guidelines.
- Maintain consistent attendance and availability for work.
- Carry out additional duties as assigned.
- Standardize and maintain recipes across all food outlets to ensure consistency and quality.
- Champion Alterra's health and safety standards, ensuring compliance through training and audits.
- Oversee kitchen equipment maintenance and repair, coordinating with maintenance teams for timely service.
- Support outlet chefs in achieving operational consistency, staffing needs, and brand standards.
- Engage in community outreach programs and initiatives, positively representing the resort.
- Maintain accurate, standardized recipes within the food management system for efficiency and cost control. Education:
- Two or more years of post-high school education.
- Degree or certificate in culinary education required.
- Resort experience preferred.
- West Virginia Food Handlers Certificate required within 30 days of hire.
- ServSafe Certificate required within 3 months of hire. Preferred Experience:
- Five or more years in a related role.
- Strong knife handling skills required.
- Familiarity with various cooking instruments including ovens and grills.
- Knowledge of safe food handling practices.
- Advanced knowledge of food management principles and staff management.
- Experience with resort operations, including personnel relations and budgeting.
- Leadership skills to motivate and develop the kitchen team.
- Able to work under time constraints and deadlines.
- Strong verbal and written communication skills in English.
