Position: Chef de Cuisine
Culinary Leadership Overview & Responsibilities
At Chef de Cuisine - Curveball Kitchen, located within OKANA Resort & Indoor Waterpark, we deliver a high-energy, guest-focused dining experience that reflects the excitement and vibrancy of our resort. This culinary outlet plays a key role in supporting both resort guests and day visitors, offering consistent, high-quality food service in a fast-paced and dynamic environment.
Primary Responsibilities
Operational Excellence
Oversee and execute daily kitchen operations for breakfast, lunch, and dinner service, ensuring a seamless experience for both resort and external guests
Maintain high culinary standards across all food preparation, presentation, and service execution
Collaborate with the Executive Chef and Executive Sous Chef on daily operations, priorities, and production planning
Lead daily line-ups and team briefings to communicate expectations, service flow, and operational updates
Ensure all food quality, and portion control standards are consistently met
Food Quality & Safety
Ensure the highest quality of food products through proper receiving, storage, and preparation standards
Monitor inventory, spoilage, and product rotation to maintain freshness and reduce waste
Enforce health, safety, and sanitation standards in compliance with company and regulatory guidelines
Conduct daily inspections of kitchen areas, equipment, and storage facilities
Team Leadership & Development
Lead, coach, and develop culinary team members (Curators), fostering a culture of accountability, teamwork, and engagement
Conduct ongoing training sessions to ensure proper use of equipment, adherence to recipes, and consistency in execution
Partner with leadership to recruit, onboard, and develop talent within the culinary team
Promote high morale and performance standards, aligned with OKANA’s culture and service expectations
Financial & Operational Efficiency
Support the development of standardized recipes to maintain food cost targets
Monitor labor productivity and scheduling, ensuring optimal staffing levels
Track and manage operating costs, identifying opportunities for efficiency and cost control
Guest Experience & Innovation
Ensure all dishes meet brand standards for quality, consistency, and presentation
Identify guest trends and preferences to enhance menu offerings
Collaborate with leadership to develop seasonal features, specials, and menu enhancements
Support large-scale events and high-volume service periods as needed
Administrative Responsibilities
Maintain accurate documentation, logs, and operational records
Ensure all daily reports, function sheets, and communications are completed and shared effectively
Communicate key operational updates across shifts to ensure continuity
What We’re Looking For
Experience
3–5 years of experience in a high-volume kitchen or resort-style dining environment
Experience in fast-paced, guest-centric culinary operations preferred
Education
Culinary Diploma or equivalent experience preferred
Core Competencies
Strong communication and leadership skills
Ability to perform in a high-energy, fast-paced environment
Knowledge of food safety, sanitation, and HACCP standards
Financial awareness (food cost, labor management)
Creativity and attention to detail in food presentation
Team-oriented mindset with a focus on developing others
