As our Hygiene Manager, you protect the integrity of the guest experience by making sure every detail behind the scenes is clean, controlled, and audit-ready at all times.

Here’s what you’ll be responsible for:
🧼 Hygiene & Sanitation Leader
- Define, implement, and maintain Mama’s hygiene and sanitation standards across all F&B and BOH areas
- Ensure daily cleanliness checks are completed and standards are consistently upheld
- Drive a culture of cleanliness, accountability, and pride across all teams
⚡ Compliance & Food Safety Champion
- Ensure full compliance with local food safety regulations and HACCP standards
- Maintain up-to-date documentation, logs, and audit readiness at all times
- Lead internal and external hygiene audits with confidence and accuracy
📊 Risk & Control Manager
- Identify hygiene risks and implement corrective actions proactively
- Monitor pest control, waste management, and sanitation processes
- Ensure all incidents are recorded, resolved, and prevented from recurring
👥 Training & Awareness Leader
- Train kitchen, stewarding, and service teams on hygiene best practices
- Deliver regular refresher sessions to maintain high awareness and compliance
- Embed a strong hygiene-first culture across all departments
🤝 Cross-Team Collaborator
- Work closely with Culinary, Stewarding, and Operations teams to ensure alignment
- Support pre-opening setups, inspections, and operational readiness
- Act as the key point of contact for all hygiene-related matters
🛎️ Standards Guardian
- Conduct regular inspections across kitchens, storage areas, and back-of-house spaces
- Ensure proper chemical usage, storage, and safety procedures are followed
- Maintain impeccable documentation and reporting standards
