Job description
The Cook I - Sushi is responsible for preparing high-quality sushi and Japanese cuisine in accordance with Wynn Las Vegas standards. This role requires strong foundational culinary skills, attention to detail, and the ability to consistently deliver exceptional presentation and quality in a fast-paced, high-volume luxury dining environment.
Key Responsibilities
Food Preparation & Execution
- Prepare sushi, sashimi, rolls, and other Japanese dishes according to established recipes and standards
- Ensure all food is prepared with precision, consistency, and high-quality presentation
- Maintain proper portioning and minimize waste
Product Quality & Standards
- Inspect fish, seafood, and ingredients to ensure freshness and quality
- Uphold strict quality control standards for all menu items
- Ensure all dishes meet Wynn’s luxury presentation and taste expectations
Knife Skills & Technique
- Demonstrate strong foundational knife skills and proper cutting techniques
- Maintain consistency in slicing, portioning, and plating
- Continue developing sushi techniques in alignment with culinary standards
Station Execution & Support
- Ensure station is fully stocked, organized, and prepared for service
- Maintain a clean, efficient workspace throughout service
- Execute production efficiently during peak service periods
Food Safety & Sanitation
- Follow all health, safety, and sanitation standards
- Maintain proper food storage, labeling, and temperature controls
- Ensure cleanliness and organization of all work areas at all times
Team Collaboration
- Work collaboratively with chefs, kitchen staff, and service team members
- Communicate clearly to ensure smooth kitchen operations
- Support team members as needed to maintain service standards
Operational Responsibilities
- Complete all opening, side work, and closing duties assigned
- Assist with inventory, prep lists, and stock rotation (FIFO)
- Participate in pre-shift meetings and daily briefings
Compliance & Brand Standards
- Adhere to Wynn grooming, uniform, and professional appearance standards
- Follow all company policies and culinary procedures
- Execute all responsibilities in alignment with Wynn service culture
Education & Experience
- High school diploma or equivalent required
- Minimum 1 year of sushi preparation experience required; 2+ years preferred
- Experience in a high-volume environment preferred
Knowledge & Skills
- Working knowledge of sushi preparation techniques and Japanese cuisine
- Strong attention to detail and commitment to quality
- Ability to work efficiently in a fast-paced environment
- Team-oriented with effective communication skills
Licenses & Certifications
- Ability to obtain and maintain required work cards
Work Environment
- High-volume restaurant within a luxury resort setting
- Fast-paced kitchen focused on quality and consistency
- Flexible schedule required, including evenings, weekends, and holidays
