Job description
We are seeking an exceptional Executive Sous Chef to join the culinary team at Constance Ephelia, a prestigious luxury resort in Seychelles. In this pivotal role, you will work alongside the Head Chef to oversee all kitchen operations, maintain the highest standards of fine dining excellence, and lead a talented brigade of culinary professionals. Your expertise in Michelin-starred cuisine, combined with your visionary approach to gastronomy, will be instrumental in delivering an outstanding culinary experience to our discerning guests.
- Oversee daily kitchen operations and ensure adherence to Fine dining standards and food safety protocols
- Develop and execute innovative menus that showcase contemporary and classical culinary techniques
- Lead, mentor, and appraise kitchen staff, fostering a culture of excellence and continuous professional development
- Manage food costs, inventory control, and supplier relationships to optimise operational efficiency
- Collaborate with the Head Chef on strategic culinary direction and seasonal menu planning
- Ensure impeccable presentation and consistency of all dishes served to guests
- Maintain rigorous standards of kitchen hygiene, food safety, and compliance with health regulations
- Train and induct new kitchen team members, establishing best practices and culinary standards
- Coordinate with front-of-house staff to ensure seamless service delivery and guest satisfaction
- Analyse kitchen performance metrics and implement improvements to enhance productivity and quality
- Source and evaluate premium ingredients, with particular attention to locally-sourced and sustainable options
- Minimum 5 years' experience working in Fine dining or Michelin-starred kitchens in a similar position
- Diploma or Degree in Culinary Arts, Hospitality Management, or a related field.
- Proven expertise in classical French cuisine and contemporary culinary techniques
- Exceptional culinary expertise with proficiency in different cooking techniques and diverse cuisines
- Demonstrated leadership experience managing large kitchen brigades and fostering team development
- Advanced knowledge of food safety, hygiene standards, and kitchen compliance regulations
- Strong proficiency in menu development, recipe creation, and culinary innovation
- Excellent people skills with the ability to motivate, train, and appraise kitchen staff
- Solid understanding of food cost management, budgeting, and inventory control
- Experience in fine dining service standards and guest-focused culinary excellence
- Strong focus on guest experience and service excellence.
- Experience working in luxury resort or hospitality environments (desirable)
- Familiarity with sustainable sourcing practices and locally sourced ingredient procurement (desirable)
- Fluency in English; additional languages are advantageous
- Flexibility to work in a tropical island setting and adapt to resort operations
