Job description

We invite you to join the world of luxury hospitality at Raffles & Fairmont Doha as our new Chef de Partie.

As a Chef de Partie at Raffles Doha and Fairmont Doha, you will be responsible for delivering culinary excellence by managing your designated section with precision, consistency, and creativity. Upholding the refined standards of both Raffles and Fairmont, you will prepare and present dishes that reflect exceptional quality, attention to detail, and a deep respect for ingredients and technique.

You will play a key role in supporting the kitchen’s smooth operations by ensuring mise en place is meticulously maintained, recipes and presentation standards are strictly followed, and service is executed flawlessly during each service period. Working closely with the Sous Chef and culinary team, you will contribute to a culture of excellence, discipline, and continuous improvement, helping to create memorable dining experiences that embody the elegance, artistry, and luxury hospitality for which Raffles and Fairmont are renowned.

Key Responsibilities:

  • Manage assigned culinary section as Chef de Partie, ensuring consistent preparation, cooking, and presentation of dishes in line with Raffles & Fairmont Doha luxury brand standards.
  • Maintain full responsibility for mise en place, ensuring readiness, precision, and efficiency prior to and during service.
  • Deliver exceptional quality and consistency in every dish, upholding the refined culinary identity and elegance of Raffles & Fairmont.
  • Work closely with Sous Chefs and the culinary leadership team to execute menus, daily specials, and banquet requirements seamlessly.
  • Ensure strict adherence to recipes, portion control, plating standards, and food presentation guidelines.
  • Coordinate effectively with other kitchen sections and supporting departments to ensure smooth and timely service delivery.
  • Support menu execution and contribute to culinary innovation while respecting the heritage and sophistication of both Raffles and Fairmont dining experiences.
  • Maintain the highest standards of hygiene, cleanliness, and food safety in accordance with HACCP and hotel policies.
  • Monitor stock levels within the section, ensuring proper storage, rotation, and minimal wastage.
  • Assist in training and guiding Commis Chefs and junior kitchen team members, fostering a culture of excellence and discipline.
  • Handle operational challenges calmly and professionally, ensuring uninterrupted service and guest satisfaction.
  • Maintain consistency in kitchen operations while embodying the luxury service culture and culinary excellence of Raffles & Fairmont Doha.

What will you bring to this role?

  • Previous experience as a Chef de Partie, Demi Chef de Partie, or similar culinary role within a luxury hotel or fine dining environment, preferably with exposure to Raffles & Fairmont standards of excellence.
  • Strong culinary skills with solid knowledge of classical and contemporary cooking techniques, presentation standards, and kitchen operations.
  • Passion for gastronomy with a commitment to delivering exceptional quality aligned with the refined culinary identity of Raffles & Fairmont Doha.
  • Ability to work with precision, consistency, and attention to detail in a high-pressure, fast-paced kitchen environment.
  • Strong understanding of food safety and hygiene standards, including HACCP compliance.
  • Effective communication skills with the ability to collaborate seamlessly with kitchen and service teams.
  • Demonstrated ability to multitask and prioritize workload while maintaining high standards during service periods.
  • Strong organizational skills and a proactive approach to problem-solving in a dynamic culinary environment.
  • Ability to work collaboratively within a diverse, multicultural kitchen team.
  • Flexibility to work rotating shifts, split shifts, weekends, and public holidays as required by operational needs.
