Role Overview
As a Demi Chef de Partie at Banyan Tree Dubai, you will support the Chef de Partie in managing a specific section of the kitchen, ensuring consistent preparation and delivery of high-quality dishes. You will play an important role in maintaining culinary standards, supporting service efficiency, and contributing to an exceptional dining experience aligned with Banyan Tree’s luxury positioning.
Key Responsibilities
Section Support
- Assist the Chef de Partie in managing a designated kitchen section.
- Prepare mise-en-place according to recipes and service requirements.
- Support the preparation, cooking, and plating of dishes to brand standards.
- Ensure consistency in taste, presentation, and portion control.
Kitchen Operations
- Assist in the smooth running of service within your section.
- Ensure timely preparation and delivery of dishes during service periods.
- Follow instructions from senior chefs accurately and efficiently.
- Maintain cleanliness and organisation of your workstation at all times.
Food Quality & Standards
- Adhere strictly to recipes, presentation guidelines, and portion standards.
- Ensure all dishes meet luxury quality expectations.
- Maintain awareness of allergens and dietary requirements.
- Report any quality issues to senior kitchen staff immediately.
Teamwork & Development
- Support Commis Chefs and junior kitchen staff when required.
- Participate in training and skill development opportunities.
- Work collaboratively with colleagues across all kitchen sections.
- Contribute to a positive and disciplined kitchen environment.
Health, Safety & Hygiene
- Follow HACCP, food safety, and hygiene standards at all times.
- Maintain proper food handling, storage, and rotation practices.
- Ensure cleanliness and safety of equipment and work areas.
- Report hazards or maintenance issues promptly.
Cost Awareness & Efficiency
- Minimise waste through careful preparation and portion control.
- Use ingredients efficiently and responsibly.
- Support stock handling and basic inventory processes.
Qualifications & Experience
- Previous experience as Commis Chef or Demi Chef de Partie in a hotel or high-end restaurant preferred.
- Basic knowledge of culinary techniques and kitchen operations.
- Understanding of food hygiene and HACCP standards.
- Culinary training or certification is an advantage.
