Job description
Job Summary Prepare and portion meat and fish products for retail and wholesale customers while maintaining product quality and presentation. Ensure safe handling, sanitation, and accurate inventory control in a fast-paced food retail environment. Number of Positions 3 Main Duties Trim, cut, debone and portion whole carcasses, primals, and fish to meet product specifications and portion sizes Fillet, skin, and bone fish using appropriate techniques and tools to maximize yield and product quality Package, weigh, label and price products accurately while maintaining proper rotation and storage practices Operate and maintain cutting, grinding, and refrigeration equipment, ensuring safe operation and routine cleaning Monitor product quality, discard compromised items, and follow established food safety and sanitation procedures Assist with inventory control, stock replenishment, display merchandising, and customer inquiries about products Requirements Secondary school diploma or equivalent preferred Previous experience working as a meat cutter, fishmonger, or in a related food processing role Knowledge of cutting, deboning, filleting and portioning techniques for meat and fish Ability to use knives, saws and other cutting equipment safely and effectively Physical ability to lift and move heavy items, stand for extended periods, and perform repetitive tasks Certification in food handling or willingness to obtain required food safety training Required Skills Proficient knife and filleting skills with strong manual dexterity Knowledge of food safety, sanitation practices and temperature control Attention to detail for portion control, labeling and quality inspection Ability to operate and perform basic maintenance on cutting and refrigeration equipment Good communication and customer service skills for advising customers and taking special orders Time management and organizational skills to manage workload and maintain displays Benefits Benefits include competitive wages, supportive work environment, opportunities for growth, training support, and other employer-specific benefits depending on the position and location.
