Commis II - Thai
Job description
- Prepare and cook Thai dishes in accordance with hotel recipes, standards, and presentation guidelines.
- Assist the Chef de Partie and Sous Chef with daily kitchen operations.
- Ensure consistency in food quality, taste, portioning, and presentation.
- Prepare ingredients, sauces, and mise en place for daily operations.
- Maintain cleanliness and organization of the assigned kitchen section.
- Follow all food safety, hygiene, sanitation, and HACCP standards.
- Properly store, label, and rotate food items using FIFO principles.
- Minimize food waste and support cost control initiatives.
- Monitor stock levels and report shortages to the Chef de Partie.
- Ensure all kitchen equipment is operated safely and maintained in good condition.
- Work collaboratively with the culinary team to ensure timely food preparation and service.
- Comply with all hotel policies, health & safety regulations, and Accor brand standards.
- Minimum 1–2 years of experience as a Commis or Cook in a Thai kitchen, preferably in a hotel or upscale restaurant.
- Good knowledge of authentic Thai cuisine and cooking techniques.
- Basic understanding of food safety, hygiene, and HACCP practices.
- Ability to work efficiently in a fast-paced kitchen environment.
- Positive attitude, willingness to learn, and strong teamwork skills.
- Flexible to work shifts, weekends, and public holidays.
- Must be able to read and communicate in Thai. Basic English communication is an advantage.
