Your Role in the Story
As the Pastry Chef de Partie at LENEA, the All-Day Dining restaurant, you play a key role in supporting the pastry operation and ensuring the preparation and presentation of high-quality pastry items throughout the day, with a strong focus on the breakfast offering.
Working under the guidance of the Pastry Chef and in line with the LUURA/RIKAS concept and standards, you contribute to the preparation of desserts, breakfast pastries, baked goods and other pastry creations, ensuring consistency, creativity, quality and attention to detail in a fast-paced, design-led environment.
You are a hands-on team member who supports the smooth daily operation of the pastry section, manages mise en place and preparation for the respective shift, maintains proper stock control and organization, and works closely with the Pastry Chef, Executive Chef and kitchen leadership.
The main objective of the role is to contribute to an elevated all-day dining experience, especially during breakfast service, while maintaining LUURA/RIKAS’s high standards of culinary quality, presentation and guest satisfaction at all times.
Key Responsibilities
- Manages the production and presentation of each item based on the needs of each menu's preparations, ensuring alignment with RIKAS/LUURA standards, policies, and procedures.
- Adapts and fully follows the recipes and preparations adopted by the Pastry Chef and the company
- Leads, guides, and supervises on-site pastry teams, providing guidance on techniques, presentation, and efficiency.
- Design, coordinate, and conduct regular training programs for pastry staff, covering pastry techniques, hygiene standards, customer service, and safety procedures
- Ensures the pastry shop complies with company standards and enhances engagement, motivation, and professional development.
- Oversee daily production standards assigned, ensuring proper scheduling, peak hour coverage, and smooth preparation of all pastry offerings.
- Oversee the creation and presentation of desserts, baked goods, and confections, ensuring consistency, quality, and adherence to Paris Society/LUURA standards.
- Monitor inventory, order materials, and receive products in collaboration with the Pastry Chef, and manage cost and waste of supplies
- Conduct quality control and tasting sessions to ensure all products meet culinary and presentation standards.
- Maintain strict hygiene, safety, and compliance standards in accordance with LUURA policies and local regulations.
- Collaborate with other department heads (F&B, Reception, Events) to ensure pastry offerings align with customer needs, events, and service standards.
- Oversee the storage, handling, and rotation of pastry ingredients and finished products to ensure freshness and quality.
- Prepare reports for senior management to the Pastry chef & Executive Chef regarding performance of the position, and as assigned,
- Cultivate a culture of creativity, innovation, and continuous improvement within the pastry team.
Who We’re Looking For
- Has 5+ years of experience in fine dining or luxury hospitality pastry operations, with a proven track record of excellence.
- Brings pre-opening experience, ideally having contributed to launching new outlets or properties.
- Demonstrates creativity and innovation, developing seasonal and signature desserts that align with RIKAS/LUURA’s culinary identity.
- Is a team leader and mentor, capable of training, motivating, and developing a brigade of pastry staff.
- Maintains exceptional standards of hygiene, safety, and food handling, complying with local regulations and internal policies.
- Can manage costs, inventory, and supplier relationships effectively while ensuring quality and minimizing waste.
- Thrives in a fast-paced, high-end environment, balancing operational efficiency with exceptional guest experiences.
- Has excellent communication skills, collaborating seamlessly with F&B teams, management, and suppliers.
- Eligible to work at an EU country.
- English knowledge is a must/additional language will be considered as a plus.
